Hello!
Sorry I’ve been MIA for the past however many days, I just needed some serious downtime away from the computer. The extra long days at work, seeing an insightful play, a lazy movie night with Joben, serious chilltime, and the great movie I saw have all been taking up this foodie’s time.
Food was naturally a part of my decompression, so here’s a look at some of my weekend highlights:
Friday night, Jodi and I dug through my enormous stack of take-out menus. She went with some yummy pad thai, while I ordered from one of my absolute favorite vegetarian restaurants, Gobo.
I went with the eggplant and string beans in basil sauce which came with brown rice and shredded papaya salad. It was a bit sauce-heavy for my taste, but very flavorful: 
Prior to digging into my main dish, I may or may not have eaten about 6 pan seared spinach dumplings:
After Jodi and I tried to make sense of the ridiculous and horrible movie, Meet Bill, I nibbled on two squares of Lindt Dark Chocolate with Sea Salt:
Saturday morning, I awoke to some leftover pancakes from last weekend. I simply stored them in my freezer and toasted them in the morning. They came out nearly as fluffly and fresh as when originally made:
I topped them with Peanut Butter & Co. Mighty Maple, 1 Sliced Naner, Frozen Strawberries (defrosted), and a drizzle of honey. Bliss!
While letting my pancakes digest, I downloaded a ton of mash-ups by DJ Earworm and DJ Moule in order to give me extra inspiration for running 4.5 miles on the treadmill later at the gym. Fortunately, the new tunes served as excellent running fuel.
After my run, I just kind of grazed on the following mini-meals and snacks throughout the afternoon:
Barney Butter and Strawberry Rubarb Jam on Whole Wheat Toast


There was also HALF A BAG OF DRIED TURKISH APRICOTS that I consumed. Ummm, as much as I love dried apricots..be careful about this one folks. Let’s just say, if anyone were to light a match around me after my dried fruit binge, the building would’ve exploded because of my gas leak. Know what I’m sayin’?Sorry if that was TMI, but I feel you all should know the dangers of eating too much dried fruit.
Anywho…dinner was take-out yet again because my fridge was scarce and my laziness was abundant. I went with Healthalicious, one of my go-to restaurants for healthy and delicious fare:
Pan Seared Cajun Salmon topped with Fresh Salsa
Jicama and Carrot Slaw
Steamed Mixed Veggies
The salmon was delicious and filling without being to greasy. Nice job, Healthalicious!
Dessert was a serving of Coconut Bliss Peanut Butter Swirl:
These coconut ice creams are taking over my dessert life. I’m ok with that.
Sunday morning, I awoke to an incredibly delicious bowl of oats:
1/4 Cup McCann’s Irish Steel Cut Oats (Quick Cooking)
3/4 Cup Water
1 T Chia Seeds
1/4 Cup Egg Whites
1 Banana (mashed and stirred in)
1 Dropper of Nu Natural Vanilla Stevia
Golden Raisins
Chunky Cocoa Granola
1 Hefty Tablespoon of Barney Butter

I think I’m going to start mashing my bananas into my oatmeal from now on, it is such a delicious and creamy way to naturally sweeten my morning whole grains!
After my breakfast simmered down, I went for a 3 mile run at the gym. Afterwards, I did a full-body strength workout (arms, abs, and legs), followed by a nice stretch.
Lunch was:
Whole Wheat Toast with Barney Butter, Strawberry Rhubarb Jam, Naner Slices
Pineapple Chobani Yogurt
I realize my weekend was heavily breaded (like, Fried Chicken breaded) but I’ve been craving PB&J toast heavily this week. Plus, I prefer to load up on carbs during the day anyway.
For whatever reason, my appetite wasn’t in high gear and I didn’t snack much during the afternoon. Just a few bites of trail mix.
Dinner was a tasty omelette with a side of steamed frozen broccoli that fell apart as I was flipping it. Taste trumped appearance in this meal:
The Omelette:
2 Eggs
1 Chicken Sausage (Spinach and Feta)
Sprinkle of Shredded Four Cheese Blend
Dessert was divine, and will be repeated soon:
That would be a cup of defrosted frozen strawberries, drizzled in chocolate syrup, on top of a scoop of Coconut Bliss Peanut Butter Swirl ice cream.
Gah.
Afterwards, I scooted on over to the Lincoln Center Cinema to see the ultra-charming, classy, and beautiful film, “An Education.” It’s worth mentioning that Carrie Mulligan looks exactly like my best friend. So, basically I was watching Jodi on the silver screen for nearly two hours.

Wow, I am so jealous of that Gobo takeout, it looks amazing! Your pancakes look delicious too.
As far as frozen fruit goes, aside from smoothies, I like snacking on it straight up when it’s really hot outside. So cooling and refreshing!

i love frozen fruit in smoothies, primarily. i’m not crazy about biting into most frozen fruit, but i could live off of frozen grapes all summer!

Good to know the pancakes reheat after being frozen! Always wondered. Everything looks delish- I miss NY take-out!
I thaw frozen fruit and throw it into yogurt/cereal bowls
Frozen berries are such lifesavers–they help you start your day out right (in oatmeal) and help it end even better (in daiquiris).
I keep meaning to try egg whites in oatmeal, but I just.can’t.do.it. How do they affect the texture and taste?
Takeout is so much classier where you live! Green papaya salad, YUM!
My favorite frozen fruit use is blending frozen mango with plain yogurt and a bit of milk/water… mango lassi!
Everyone needs a little time away – looks like a great break. To be honest, I never think of frozen fruit! I know – I’m probably missing out.

Okay so many things that I can comment about! First of all, I loooove Gobo. I want there there last wednesday and have ot go back soon to try everything I didn’t have. Delicious!
Second, one things that I discovered is putting bananas in my oatmeal while it is over the stove. They kind of melt and make the oatmeal super thick and fluffy, if you like that kinda thing
And third, stick with the banana theme, I love just throwing half a peeled banana in the freezer and having it for dessert. It takes like candy and definitely kicks the sweet tooth craving I get post dinner.
Whenever I do take out I always go asian and my favorite is veggie stir fry. Your’s look good too!
Yum, I love Gobo and used to go there all the time. I’ve never heard of Healthalicious, though, I should look it up.

Haha, that is me with Bette Midler. I totally forgot that was a noteworthy background photo. Long story behind that picture! Let’s just say, I crashed her Halloween charity gala years ago with a friend. Guess what my Halloween costume was? Bette Midler. It was a great night.
holy cow everything about this post is SO RIGHT!!! Your foods are so tasty, especially take out!! hahah And I can’t believe those pancakes were frozen. looks so awesome…and fluffy. I love to throw frozen fruit on top of my oatmeal…letting it melt all the way in. Especially bananas and frozen blueberries!!
There’s a Healthalicious that recently opened in my neighborhood and I’m wondering if it’s the same one..they have shakes and salads, but I didn’t see such deliciousness as you have on your plate when I walked in!
My favorite way to eat frozen fruit is either in smoothie form or straight out of the freezer for dessert (grapes and mango chunks) YUM!
